Crust
- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
Filling
- 16 oz cream cheese, at room temperature
- ½ cup sour cream
- ¾ cup granulated sugar (adjust to taste)
- 2 Earl Grey tea bags
- 1 tsp vanilla extract
- 3 large eggs, lightly beaten
- Prepare Pan and Crust: Preheat oven to 325°F (160°C). Line an 8-inch springform pan with parchment paper and grease the sides.
- Make the Crust: In a bowl, mix crushed graham crackers with melted butter. Press into the bottom of the pan and bake for 10 minutes until golden. Let cool.
- Brew Tea: Brew two cups of Earl Grey tea; let it cool completely.
- Make Filling: Beat cream cheese until smooth in a mixing bowl. Add sugar, sour cream, vanilla extract, and cooled tea (removing tea bags). Mix until creamy.
- Add Eggs: Gradually incorporate beaten eggs one at a time, mixing gently until just combined.
- Bake Cheesecake: Pour filling over the cooled crust and bake for about 60 minutes until set around edges but slightly jiggly in center. Turn off oven, crack door open, and cool for an hour before refrigerating overnight.
Notes
- Adjust sugar to taste for desired sweetness.
- Allow cheesecake to cool in the oven with the door cracked to prevent cracking.
- Refrigerate overnight for best texture and flavor development.
