Instructions

  1. Preheat. Preheat oven to 425°F (220°C). Butter two 6-ounce (180 ml) ramekins generously and dust with cocoa powder, tapping out excess.
  2. Melt chocolate and butter. Melt dark chocolate and butter together in a double boiler over simmering water or in 20-second microwave bursts, stirring until smooth and glossy.
  3. Whisk eggs and sugar. In a clean bowl, whisk 2 whole eggs, 1 egg white, and granulated sugar until pale, thick, and slightly frothy (3-5 minutes by hand or 2 minutes with electric mixer).
  4. Combine chocolate and eggs. Slowly pour melted chocolate mixture into the egg mixture, folding gently with a spatula to keep air in the eggs.
  5. Fold in cocoa and flavorings. Sift cocoa powder into the batter and fold in along with vanilla extract and salt until thick and shiny.
  6. Fill ramekins. Divide batter evenly into prepared ramekins, filling about ¾ full.
