Ingredients

- ½ cup (100g) granulated sugar

- Melt chocolate and butter. Melt dark chocolate and butter together in a double boiler over simmering water or in 20-second microwave bursts, stirring until smooth and glossy.
- Whisk eggs and sugar. In a clean bowl, whisk 2 whole eggs, 1 egg white, and granulated sugar until pale, thick, and slightly frothy (3-5 minutes by hand or 2 minutes with electric mixer).
- Combine chocolate and eggs. Slowly pour melted chocolate mixture into the egg mixture, folding gently with a spatula to keep air in the eggs.
- Fold in cocoa and flavorings. Sift cocoa powder into the batter and fold in along with vanilla extract and salt until thick and shiny.
- Fill ramekins. Divide batter evenly into prepared ramekins, filling about ¾ full.
