  • 2 shallots (chopped)
  • 2 cloves garlic (minced)
  • 1 teaspoon thyme (fresh)
  • 1 package puff pastry (rolled out to 1/8 inch thick)
  • 1 egg beaten (for brushing)
  • 1 tablespoon Dijon mustard (optional)

Instructions

  1. Step 1: In a skillet, heat olive oil over medium-high heat. Season beef cubes with salt and pepper, then sear each piece for 2-3 minutes until they’re beautifully browned.
  2. Step 2: Remove the seared beef from the skillet and let it cool on a plate. This helps maintain its juiciness when wrapped in pastry.
  3. Step 3: In the same skillet, add chopped mushrooms, shallots, and minced garlic. Sauté for about 5-7 minutes until mushrooms are golden brown and fragrant.
  4. Step 4: Stir in fresh thyme, seasoning with a pinch of salt and pepper. Remove from heat and allow the mixture to cool as well.
