Instructions

  1. Mix Ingredients: In a large bowl, mix together sourdough discard, all-purpose flour, sugar, and salt until well combined.
  2. Add Butter: Add cold, cubed butter to the flour mixture and blend until it resembles coarse crumbs.
  3. Add Water: Gradually mix in ice water and stir gently until the dough comes together, being careful not to overwork it.
  4. Chill Dough: Shape the dough into a disc, wrap in plastic wrap, and refrigerate for at least 30 minutes.
  5. Roll and Cut: On a floured surface, roll out the chilled dough to about 1/8 inch thick and cut into rectangles, about 3×4 inches each.
