This Easy Balsamic Chicken recipe features tender bone-in chicken thighs cooked with fresh vegetables in a tangy balsamic honey mustard sauce, baked to juicy perfection and garnished with fresh herbs.

Chicken and Vegetables

  • 2 tablespoons olive oil
  • 4 bone-in (skin-on chicken thighs (about 1 1/2 lbs.)
  • 1/2 of a small sweet onion (diced)
  • 2 garlic cloves (minced)
  • 1/2 pound fresh green beans (trimmed and chopped in half)
  • 1 1/2 cups matchstick carrots
  • 1 pint cherry tomatoes (halved)
  • Fresh parsley or basil for garnish

Sauce

  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons balsamic vinegar
  • 1 tablespoons stone ground mustard
  • 3 tablespoons honey
  • 4 garlic cloves (minced)
  • 2 teaspoons Italian seasoning
  • 1/2 teaspoon salt
  • 1/8 teaspoon black pepper

Instructions

  1. Preheat the oven: Preheat the oven to 350 degrees F.
  2. Season and mix sauce: Season the chicken thighs with salt and pepper on both sides.In a small mixing bowl whisk together the extra virgin olive oil, balsamic vinegar, mustard, honey, garlic, Italian seasoning, salt and pepper. Set aside.
  3. Heat olive oil: In a large skillet heat the 2 tbsps. olive oil over medium heat.
  4. Sauté onion and garlic: Add the onion and garlic and sauté for 2 minutes.
  5. Cook chicken skin side down: Place the chicken in one single layer in the skillet with the skin side down first.
  6. Cook chicken and add green beans: Cook the chicken for about 3-4 minutes on that side. Flip the chicken and add the green beans to the pan. Continue to cook the chicken for 5 more minutes.
  7. Add sauce and coat chicken: Add the sauce mixture to the skillet covering the chicken with the sauce and turn the chicken over until they are coated.
  8. Add carrots and tomatoes: Add the matchstick carrots, tomatoes to the green beans and chicken.
  9. Bake chicken and vegetables: Bake in the oven for 15 minutes or until the chicken is cooked through and reaches an internal temperature of 165 degrees F.
  10. Serve: Remove and serve over rice or with pasta along with fresh parsley.
