  • 1 cup granulated sugar
  • 3 large eggs
  • 1 cup fresh lemon juice*
  • zest from 3 lemons
  • ½ cup unsalted butter (melted and cooled slightly)

Instructions

  1. Whisk sugar and eggs
    In a microwave-safe bowl, whisk together the sugar and eggs until smooth. Whisk in lemon juice, lemon zest, and butter.
  2. Cook in the microwave for 5 minutes
    Whisking well after each minute (toward the end, whisk every 15-30 seconds.) DO NOT let the mixture come to a boil or the eggs will curdle. It should be thick enough to coat the back of a wooden spoon.
  3. Pour and cool
    Remove from the microwave, and pour into small sterile jars. Allow to cool, then store in the fridge. (It will be thin at first, but will thicken the more it cools, typically several hours but ideally overnight to fully set.)
