Ingredients

Scale

Peach Mixture

  • 4 large ripe peaches, peeled, pitted, and sliced (about 4 cups)
  • 1 tablespoon fresh lemon juice
  • 1/4 cup brown sugar (from the 1/2 cup divided)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon (from the 1 teaspoon divided)

Almond Streusel Topping

  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats (old-fashioned oats preferred)
  • 1/2 cup sliced almonds (toasted or raw)
  • 1/4 teaspoon salt (from pinch of salt)
  • 1/4 cup brown sugar (from the 1/2 cup divided)
  • 1/2 teaspoon ground cinnamon (from the 1 teaspoon divided)
  • 6 tablespoons cold unsalted butter, cubed

Instructions

  1. Prepare Peaches: Peel, pit, and slice about 4 large ripe peaches to yield roughly 4 cups. Toss the slices in a bowl with 1 tablespoon fresh lemon juice and 1/4 cup brown sugar. Add 1 teaspoon vanilla extract and 1/2 teaspoon cinnamon. Stir gently to coat. Let it sit for 10 minutes to macerate and draw out juices.
  2. Make Almond Streusel: In a medium bowl, combine 1/2 cup all-purpose flour, 1/2 cup rolled oats, 1/2 cup sliced almonds, 1/4 teaspoon salt, 1/4 cup brown sugar, and 1/2 teaspoon cinnamon. Cut in 6 tablespoons cold, cubed unsalted butter using a pastry cutter or your fingers until the mixture looks crumbly and clumps form.
  3. Cook Peaches: Place a 10-inch cast iron skillet over medium heat. Add the peach mixture, including any juice, spreading it evenly. Let the peaches begin to soften and bubble for about 3-4 minutes.
  4. Add Streusel Topping: Sprinkle the almond streusel evenly over the peaches. Press down slightly but don’t compact it too much. Reduce heat to medium-low.
  5. Cook with Cover: Cover the skillet with a lid or foil to trap steam and cook for 15-18 minutes. Check after 12 minutes to ensure the topping is browning but not burning. If the topping isn’t getting crunchy enough, remove the cover for the last 3-5 minutes to let it crisp up.
  6. Cool and Serve: Once the topping is golden brown and the peaches are bubbling, remove from heat. Let cool for 5 minutes to thicken up a bit before serving. Serve warm, ideally with vanilla ice cream or a dollop of whipped cream.

Notes

  • Check the crisp after 12 minutes to avoid burning the topping.
  • Remove cover near the end if more crunch is desired.
  • Serve warm with vanilla ice cream or whipped cream for best flavor.
