Instructions

  1. Prepare the Special Sauce: In a small mixing bowl, combine 1/4 cup mayonnaise, 2 tablespoons ketchup, 1 tablespoon Dijon mustard, 1 teaspoon smoked paprika, 1/2 teaspoon garlic powder, and 1 teaspoon pickle juice. Whisk until smooth and refrigerate while you prep the rest. Chill for at least 30 minutes for best flavor.
  2. Preheat Your Grill or Skillet: Heat your grill or cast iron skillet to about 400°F (204°C). Lightly oil the grill grates if using a grill.
  3. Form the Burger Balls: Divide ground beef into 4 equal portions (about 1/3 lb or 150g each). Roll each into a loose ball without overworking the meat.
  4. Toast the Brioche Buns: Split buns and toast cut-side down on grill or skillet until golden brown, about 1-2 minutes. Set aside.
