Instructions

  1. Prepare Watermelon: Cut about 4 cups (600g) of seedless watermelon into small chunks. Remove any seeds if present. Chill the watermelon in the fridge for 30 minutes beforehand for extra cold sorbet.
  2. Blend Watermelon: Place the chilled watermelon chunks into a high-speed blender or food processor. Blend until smooth and liquidy, about 1-2 minutes, aiming for a silky texture without large pieces.
  3. Strain (Optional): Optional: Pour the watermelon puree through a fine mesh strainer into a bowl to remove pulp and fibrous bits for a smoother sorbet.
  4. Mix Ingredients: Stir in 2 tablespoons (30 ml) fresh lime juice and 1 teaspoon Tajin seasoning into the watermelon liquid. Taste and adjust; add a teaspoon of honey or agave syrup if the watermelon isn’t very sweet.
  5. Freeze and Stir: Pour the mixture into a shallow freezer-safe container. Freeze for about 1 hour, then stir vigorously with a fork to break up any ice crystals. Repeat stirring every 30 minutes for 2-3 hours until firm but scoopable.
