  • 1 pound ground beef (80/20 lean-to-fat ratio recommended)
  • 3 medium potatoes (about 1 pound; Yukon Gold or Russet)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil or vegetable oil
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon dried thyme or oregano
  • Optional: Fresh parsley, chopped (for garnish)
  • Optional: Splash of Worcestershire sauce
  • Optional: Pinch of chili flakes

Instructions

  1. Prep the potatoes: Peel if desired and dice into 1/2-inch cubes. Rinse under cold water to remove excess starch and pat dry.
  2. Cook the potatoes: Heat 1 tablespoon of oil in a large skillet over medium heat. Add the diced potatoes in an even layer and cook undisturbed for a few minutes until bottoms brown. Stir occasionally until golden and tender, about 10-12 minutes.
  3. Cook the ground beef: Push potatoes to the side of the pan and add remaining oil if needed. Crumble in the ground beef, season with salt, pepper, smoked paprika, and thyme. Cook, stirring occasionally, until no longer pink and browned, about 8-10 minutes.
  4. Add onions and garlic: Add chopped onions and minced garlic to the skillet. Cook until onions soften and become translucent, about 3-4 minutes.
  5. Simmer to meld flavors: Stir everything together, lower heat, cover loosely, and let simmer for 5 minutes to meld flavors. Add a splash of beef broth or water if mixture seems dry.
  6. Adjust seasoning and garnish: Taste and adjust seasoning with salt and pepper. Garnish with chopped fresh parsley before serving.
