Ingredients
- 1.5 lb mission figs (about 12)
- 2 tbsp unsalted butter
- 2 tbsp dark amber honey (such as clover)
- Pinch sea salt
- 1 cup heavy cream

- 6 large egg yolks
- 2 cups whole milk ricotta cheese
- 1/4 cup honey (plus extra for drizzling)
- 1 tsp fresh lemon juice
- Prepare the figs: Rinse and pat dry the mission figs. Cut off the stems and halve or quarter them depending on their size to allow even cooking.
- Cook the figs: In a skillet over medium heat, melt the unsalted butter. Add the figs, 2 tablespoons of dark amber honey, and a pinch of sea salt. Cook gently until the figs are soft and caramelized, about 10 minutes. Remove from heat and let cool slightly.
- Make the custard base: In a saucepan, combine 1 cup heavy cream with 3/4 cup sugar and a pinch of sea salt. Heat gently until the sugar dissolves and the cream is warm but not boiling.
- Temper the egg yolks: In a bowl, whisk the 6 large egg yolks. Slowly pour the warm cream mixture into the egg yolks while whisking constantly to prevent scrambling.
- Cook custard: Return the mixture to the saucepan and cook over low heat, stirring constantly, until it thickens enough to coat the back of a spoon. Do not let it boil.
- Combine ricotta and honey: In a separate bowl, whisk together the 2 cups whole milk ricotta cheese, 1/4 cup honey, and 1 teaspoon fresh lemon juice until smooth and creamy.
- Mix custard and ricotta: Gradually fold the warm custard mixture into the ricotta mixture, stirring until fully combined.
- Chill mixture: Transfer the mixture to a container and refrigerate until completely cold, at least 4 hours or overnight.
- Churn ice cream: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions until it reaches a soft-serve consistency.
- Incorporate figs: Gently fold the caramelized figs into the churned ice cream.
- Freeze: Transfer the ice cream to a container and freeze until firm, about 4 hours.
