Spice Blend

  • 1 teaspoon Salt (Enhances flavors)
  • 1 teaspoon Freshly ground black pepper (Adds warmth)
  • 1 tablespoon Chili powder (Adjust for spice)
  • 1 teaspoon Garlic powder (Savory touch)
  • 1 teaspoon Dried oregano (Aromatic quality)
  • 1 teaspoon Paprika (Sweet and smoky flavor)
  • 1 teaspoon Cumin (Grounded earthiness)

Main Ingredients

  • 1 pound Chicken tenders (Tender cuts ensure juiciness)
  • 2 tablespoons Avocado oil (For cooking chicken)
  • 1 cup Thinly shredded red cabbage (Crunchy contrast)
  • 1 cup Thinly shredded green cabbage (Added texture and nutrition)
  • 1/2 cup Thinly sliced red onion (Mild sweetness)
  • 1/4 cup Chopped fresh cilantro (Enhances freshness)
  • 1/2 cup Southwest Dressing (Ties elements together)
  • 1 tablespoon Lime (Brightens flavors)
  • 4 large Burrito-sized tortillas (Large enough to hold fillings)
  • 1/4 cup More Southwest Dressing (Extra punch of flavor)
  • 2 large Avocados, sliced (Rich texture)
  • 1 cup Shredded goat cheddar cheese (Tangy, creamy flavor)
  • 1 cup Tortilla chips (For extra crunch)

Instructions

  1. Preparation: In a small bowl, mix together the salt, pepper, chili powder, garlic powder, dried oregano, paprika, and cumin. Reserve 1 teaspoon for the slaw.
  2. Season Chicken: Pat the chicken tenders dry with paper towels. Sprinkle the remaining spice blend evenly over all sides.
  3. Cook Chicken: Heat a large skillet over medium heat. Add avocado oil, then arrange chicken tenders in a single layer. Cook for 3 minutes, flip and cook for another 2-3 minutes until golden brown.
  4. Rest Chicken: Transfer cooked tenders to a cutting board and let them rest for at least 5 minutes before slicing.
  5. Make Slaw: In the medium bowl with the reserved spice rub, combine the shredded cabbage, red onion, cilantro, Southwest dressing, and lime juice. Adjust seasoning if needed.
  6. Warm Tortillas and Assemble: Warm the tortillas. Spread Southwest dressing across each tortilla, then add slaw, chicken, avocado, goat cheese, and crushed tortilla chips.
  7. Serve: Roll each wrap tightly, slice diagonally in half, and serve immediately.

Notes

  • Letting the chicken rest before slicing helps retain its juiciness.
  • Reserve part of the spice blend for the slaw to enhance flavor consistency.
  • Adjust chili powder quantity to control spice level.
