  • 2 pounds confectioners sugar
  • 1/2 cup fruit juice or broth (as a bourbon substitute)
  • 2 cups finely chopped pecans
  • 14 ounces high-quality chocolate (for coating)
  • Pecan halves (for garnish)

Instructions

  1. Mix Butter and Sugar: In a mixing bowl, cream together softened butter and 1 pound of confectioners sugar until smooth.
  2. Add Juice/Broth and Pecans: Stir in your chosen fruit juice or broth along with the remaining sugar and chopped pecans until fully combined.
  3. Chill: Cover the mixture and chill in the refrigerator for about 2 hours until firm.
  4. Form Balls: Roll tablespoon-sized portions into balls and place them on a baking sheet lined with parchment paper.
  5. Freeze and Melt Chocolate: Freeze until hard, then melt chocolate in a double boiler over low heat.
  6. Dip in Chocolate: Dip each ball into melted chocolate, tapping off excess, and place back on parchment paper.
  7. Garnish and Set: Garnish with a pecan half on top and refrigerate until set.

Notes

  • Use fruit juice or broth as a bourbon substitute for a non-alcoholic version.
  • Chill and freeze times are essential to achieve the perfect texture for coating.
