This Loaded Cheesesteak Ciabatta Sandwich features tender, thinly sliced steak with sautéed peppers and onions, topped with melted cheese and served on a crispy toasted ciabatta roll for a deliciously hearty meal.

Sandwich

  • 1 large ciabatta roll or ciabatta sandwich bun
  • 4 slices provolone, mozzarella, or white cheddar cheese
  • 1/4 cup shredded lettuce, optional
  • 1 tablespoon mayonnaise, optional
  • 1 teaspoon sesame seeds or everything seasoning, optional for topping

Steak and Vegetables

  • 10 oz thinly sliced ribeye, sirloin, or shaved steak
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1/2 red onion, thinly sliced
  • 1/2 red bell pepper, sliced
  • 1/2 yellow bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon soy sauce
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon smoked paprika

Instructions

  1. Toast the Ciabatta Slice the ciabatta roll in half.
  2. Toast it in a skillet, oven, or toaster until the edges are crisp and the inside is lightly golden.
  3. Sauté the Vegetables Heat olive oil and butter in a large skillet over medium heat.
  4. Add red onion and bell peppers.
  5. Cook for 5–7 minutes until softened, glossy, and lightly caramelized.
  6. Add Garlic and Seasoning Stir in garlic, salt, black pepper, and smoked paprika.
  7. Cook for 30 seconds until fragrant.
  8. Cook the Steak Push the vegetables to one side of the skillet.
  9. Add the thinly sliced steak.
  10. Cook for 3–5 minutes, stirring often, until browned and tender.
  11. Add the Sauces Pour in Worcestershire sauce and soy sauce.
  12. Toss the steak and vegetables together until juicy and coated.
  13. Melt the Cheese Lower the heat.
  14. Layer cheese slices over the steak mixture.
  15. Cover for 1–2 minutes until creamy and melted.
  16. Build the Sandwich Spread mayonnaise on toasted ciabatta if using.
  17. Add shredded lettuce to the bottom half.
  18. Pile the cheesy steak, peppers, and onions on top.
  19. Finish and Serve Sprinkle with sesame seeds or everything seasoning if desired.
  20. Add the top ciabatta half.
  21. Serve warm while the cheese is melted.
