  • 1 yellow onion, finely chopped
  • 23 garlic cloves, minced
  • 1 packet taco seasoning (store-bought or homemade)
  • 1 (14.5 oz) can diced tomatoes with green chilies
  • 2 cups beef broth (homemade or low-sodium store-bought)
  • 1 to 1 1/2 cups sharp cheddar cheese, shredded
  • 1 tablespoon butter (optional)
  • Salt and fresh ground black pepper, to taste
  • Fresh cilantro or green onions for garnish (optional)

Instructions

  1. Cook Beef: Heat a large deep skillet or wide heavy-bottomed pot over medium-high heat. Add the ground beef and cook for 5-7 minutes, breaking it apart until no longer pink and starting to brown. Drain excess fat if needed.
