Ingredients
- 1 lb ground beef (80/20 blend recommended)
- 8 oz medium shell or elbow macaroni pasta (any short pasta works)
- 1 yellow onion, finely chopped
- 2–3 garlic cloves, minced
- 1 packet taco seasoning (store-bought or homemade)
- 1 (14.5 oz) can diced tomatoes with green chilies
- 2 cups beef broth (homemade or low-sodium store-bought)
- 1 to 1 1/2 cups sharp cheddar cheese, shredded
- 1 tablespoon butter (optional)
- Salt and fresh ground black pepper, to taste
- Fresh cilantro or green onions for garnish (optional)
- Cook Beef: Heat a large deep skillet or wide heavy-bottomed pot over medium-high heat. Add the ground beef and cook for 5-7 minutes, breaking it apart until no longer pink and starting to brown. Drain excess fat if needed.
- Cook Onion and Garlic: Add the chopped onion and minced garlic to the skillet with the beef. Cook for 3-4 minutes until the onion softens and becomes translucent.
