Ingredients
- 4 cups cubed watermelon, seeds removed
- 1 cup full-fat canned coconut milk
- 10–12 fresh mint leaves, washed and torn
- 1 tablespoon freshly squeezed lime juice
- 1–2 tablespoons honey or maple syrup (optional)
- 1 teaspoon vanilla extract (optional)
- Pinch of salt
- Prepare the Watermelon Puree: Cut about 4 cups (600g) of fresh watermelon into cubes, removing seeds. Place cubes in a blender with lime juice and a pinch of salt. Blend until smooth, about 1-2 minutes. For a pulp-free texture, strain through a fine mesh sieve.
- Make the Mint Coconut Swirl: Warm 1 cup (240ml) of full-fat coconut milk with 10-12 torn fresh mint leaves over low heat for 5 minutes. Remove from heat, cool slightly, strain out mint leaves. Stir in honey or maple syrup and vanilla extract if using. Chill in fridge.
- Combine and Layer: Pour about two-thirds of the watermelon puree into popsicle molds, filling halfway or more. Spoon a layer of the mint coconut milk mixture over the watermelon. Use a skewer or chopstick to gently swirl the mixtures inside each mold.
- Freeze: Insert sticks into molds carefully. Freeze for at least 6 hours or overnight until fully set.
- Serve: To unmold, run molds briefly under warm water for 10-15 seconds. Serve immediately.
