These delicious Roast Beef Sliders feature tender caramelized onions, melted provolone cheese, and savory roast beef layered on soft Hawaiian rolls, finished with a buttery maple glaze and poppy seed topping perfect for a crowd-pleasing appetizer or meal.

  • 2 cups yellow onions (thinly sliced)
  • 1 tablespoon olive oil
  • 4 tablespoons unsalted butter (divided)
  • ⅛ teaspoon coarse kosher salt
  • ⅛ teaspoon black pepper
  • 12 Hawaiian rolls (cut horizontally)
  • 12 slices provolone cheese
  • 1 pound deli roast beef or leftover roast beef, (thinly sliced)

Butter Mixture

  • 2 tablespoons maple syrup
  • 3 teaspoons Worcestershire sauce
  • 2 teaspoons spicy brown mustard
  • 1/4 teaspoon garlic powder
  • 1 tablespoon fresh parsley
  • 1 teaspoon poppyseeds

Instructions

  1. Preheat Oven and Prepare Baking Sheet. Preheat the oven to 350° F. Line a 9×13 baking sheet with parchment paper. Set aside.
  2. Caramelize Onions. Heat a large skillet over medium heat. Add the onions, olive oil, 1 tablespoon butter, and salt and pepper to the pan and sauté for 3 minutes. Turn the heat down to medium-low and continue to cook for 10-12 minutes or until the onions are soft and slightly caramelized. Set aside.
  3. Prepare Rolls. Cut the rolls horizontally in half. Place the bottom of the rolls onto the baking sheet.
  4. Layer Cheese and Beef. Place 6 slices of provolone cheese on the rolls. Top the cheese with the roast beef.
  5. Add Onions and Top Cheese. Top the roast beef with the caramelized onions. Top the onions with 6 slices of cheese. Add the top of the rolls to the sliders.
  6. Make Butter Mixture. To a bowl add 3 tablespoons of melted butter, maple syrup, Worcestershire sauce, mustard, and garlic powder. Mix until combined.
  7. Brush and Cover. Use a pastry brush to brush the butter mixture on top. Cover the top of the rolls with an aluminum foil tent.
  8. Bake Sliders. Bake for 15-20 minutes or until the sliders are heated through and the cheese has melted. Remove from the oven and top with poppy seeds and fresh parsley.

Notes

  • Use leftover roast beef or deli roast beef for ease and flavor.
  • Be careful not to burn the onions while caramelizing by reducing heat to medium-low after initial sauté.
  • Covering the sliders with foil during baking helps retain moisture and melt the cheese evenly.
