For the Crust

  • 1 1/4 cups (150g) all-purpose flour
  • 1/4 teaspoon salt
  • 1/2 cup (115g) unsalted butter, cold and cubed

For the Filling

  • 2 cups (300g) fresh strawberries, hulled and sliced
  • 2 tablespoons granulated sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon fresh lemon juice
  • 1/4 cup fresh basil leaves, thinly sliced

For the Honey Butter Glaze

  • 3 tablespoons unsalted butter, melted
  • 2 tablespoons honey
  • Pinch of flaky sea salt

Instructions

  1. Make the crust: In a large bowl, combine 1 1/4 cups flour and 1/4 teaspoon salt. Add the cold, cubed butter and cut it into the flour using a pastry cutter or your fingers until the mixture resembles coarse crumbs with pea-sized pieces. Add 3 tablespoons ice water gradually, mixing gently until the dough just holds together. If dry, add a teaspoon more water. Form into a disk, wrap in plastic, and chill for at least 30 minutes.
  2. Prepare the filling: In a medium bowl, toss 2 cups sliced strawberries with 2 tablespoons sugar, 1 tablespoon cornstarch, 1 teaspoon lemon juice, and 1/4 cup thinly sliced fresh basil. Set aside for 10 minutes.
  3. Roll out the dough: Lightly flour a work surface and roll the chilled dough into a rough 12-inch circle, about 1/8-inch thick. Transfer the dough to a parchment-lined baking sheet.
  4. Assemble the galette: Pile the strawberry mixture in the center of the dough, leaving about a 2-inch border. Fold the edges up and over the filling, pleating as you go. Brush the exposed crust with a little water or milk.
  5. Bake: Preheat oven to 375°F (190°C). Bake the galette for 35-40 minutes until the crust is golden and strawberries are bubbly. Tent edges with foil if browning too fast.
  6. Make the honey butter glaze: Mix 3 tablespoons melted butter with 2 tablespoons honey and a pinch of flaky sea salt. Brush glaze over the warm galette right after baking. Let cool on a rack for 15 minutes before slicing.
