Shells
- 100 g of almond flour
- 100 g of icing sugar
- 70 g egg whites
- 3 g ground black pepper
- 1 g of fine salt
Filling
- 150 g of smoked salmon
- 100 g of spreadable cheese
- 30 ml of fresh liquid cream
- 5 g of fresh wild fennel
- 5 ml lemon juice
- 1 g of white pepper
- Sift Ingredients: Sift together the almond flour, powdered sugar, and black pepper. Note: Sift twice to ensure a fine powder.
- Whisk Egg Whites: Whisk the egg whites with a pinch of salt until stiff peaks form, leaving stiff peaks when you lift the beaters.
- Fold and Macaronage: Fold the solids into the egg whites using bottom-up movements. Then perform the macaronage: mix the mixture with a spatula against the sides of the bowl until it becomes glossy and smooth. The mixture should slide out like a continuous ribbon.
- Pipe Circles: Pipe small circles onto a baking sheet lined with a silicone mat. Tap the sheet firmly on the countertop to remove any air bubbles.
- Rest Shells: Let it sit in the air for 30-60 minutes. Wait until a film forms on the surface that doesn’t stick to your finger when touched.
- Bake: Bake at 140°C for about 12-15 minutes. Check that the shell is firm and doesn’t wobble when lightly touched.
- Prepare Mousse: Prepare the mousse by blending the smoked salmon and spreadable cheese, gradually adding the liquid cream.
- Add Flavorings: Add the lemon juice, chopped fennel, and white pepper to the mixture, stirring by hand so as not to deflate the cream.
- Assemble Macarons: Fill each macaron shell with a dollop of mousse using a piping bag and close with a second shell.
