This Soft Apple and Jam Cake features layers of tender cake, sweet apricot or orange jam, and fresh apple slices, crowned with a golden crust and a dusting of icing sugar for a delightful dessert.

  • 250 g of 00 flour
  • 150 g of granulated sugar
  • 120 ml of seed oil
  • 3 medium eggs
  • 120 ml of whole milk
  • 10 g of baking powder
  • 1 pinch of salt
  • 5 g vanilla extract
  • 200 g of apricot or orange jam
  • 2 large apples
  • 15 ml of lemon juice
  • 10 g of brown sugar
  • icing sugar for garnish

Instructions

  1. Beat the eggs with the sugar for about 3 minutes until the mixture is light and frothy.
  2. Gradually add the seed oil, whole milk, and vanilla extract, continuing to mix with the whisk.
  3. Incorporate the sifted flour together with the baking powder and salt, mixing gently until the mixture is smooth and without lumps.
  4. Butter and flour a 24cm springform pan.
  5. Pour half of the mixture onto the bottom of the cake pan and level it with a spatula.
  6. Spread an even layer of jam over the dough, leaving a centimeter from the edge.
  7. Arrange half of the apple slices (previously treated with lemon juice) on top of the jam and cover with the rest of the dough.
  8. Decorate the surface with the remaining apple slices and sprinkle with brown sugar.
  9. Bake in a preheated static oven at 180°C for about 40 minutes, or until the surface is golden and a toothpick inserted in the center comes out clean.
  10. Remove from the oven, let cool and garnish with icing sugar before serving.
